Glorified quick dinner tonight. Literally took me 10 minutes to prepare, now I can go back to studying while it roasts away.
1x whole fennel, 3x beets (golden and purple) a bunch of carrots, 3 sprigs of rosemary, about 5tsp of coconut oil, pepper and pink Himalayan salt.
Wash, peel and cut your veggies, chop up the rosemary and sprinkle over, dollop on your coconut oil, add seasoning and bake at 180° for approx 45mins. I usually have it with fresh greens and quinoa or some kind of plant protein. 💪
